Fattoush


This traditional bread salad incorporates the freshness of spicy tomato and cucumber salad, crisp bread and a fruity dressing.

The ingredient of Fattoush

  • 4 large ripe tomatoes diced
  • 2 lebanese cucumbers diced
  • 4 radishes cut into thin strips
  • 1 small red onion finely chopped
  • 1 4 cup small mint leaves
  • 1 4 cup small flat leaf parsley leaves
  • 1 4 cup small coriander leaves
  • 2 long pieces pane croccante see notes
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice
  • 2 teaspoons pomegranate molasses or raspberry vinegar see notes

The Instruction of fattoush

  • combine tomato cucumber radish onion mint parsley and coriander in a large bowl cover and refrigerate until required
  • break bread into pieces and place in a large serving dish spoon salad over just prior to serving drizzle dressing over salad and serve
  • to make dressing whisk olive oil lime juice and pomegranate molasses in a jug season with salt and pepper
